Take Out the Turkey! My Fave Pumpkin Pie



We've only got 4 days until Thanksgiving so don't forget to take the turkey out of the freezer!

If you run to the store today, pick up some eggnog to whip up my favorite Pumpkin Pie...

Eggnog Pumpkin Pie

1 can (15oz) solid pack pumpkin 1/4 tsp. salt

1 1/4 cup eggnog 1 1/2 tsp. pumpkin pie spice

2/3 cup sugar

3 eggs

Combine all ingredients, Pour into pie crust

Bake 60-65 min. at 375 until knife in center comes out clean

Make Ahead Turkey Gravy



Are you making your Thanksgiving shopping list this week?  We've got a week until the big day!

Make sure to add turkey wings to your list and get started on this Make Ahead Turkey Gravy!  It's simple to get the gravy done ahead of time to free up some of your day when Thanksgiving arrives.  I make it about 2 days ahead of time and store it in the fridge, but you could make it now and store it in the freezer!

Make Ahead gravy
(Woman's Day magazine, 2003)

4 turkey wings (3-4 lbs)
8 cups chicken broth
3/4 cup chopped carrots
1/2 tsp thyme
3/4 cup flour
2 Tbsp. butter
1/2 tsp. pepper

Heat oven to 400 degrees

Roast wings in roasting pan in a single layer with onions scattered on top for 1 1/4 hours or until browned.

Transfer wings and onions to large pot. Add 1 cup of water to roasting pan to loosen any brown bits then add to pot with 6 cups of broth, carrots, and thyme. Bring to a boil then reduce heat and simmer 1 1/2 hours.

Remove wings and strain broth into a saucepan, pressing the veggies to extract all the juice. Skim fat from the top, or put in fridge overnight to pull solids off top.

Whisk flour into remaining 2 cups of broth.

Bring broth in saucepan to a boil and whisk in flour mixture. Boil 4-5 minutes to thicken, then stir in butter and pepper.

Sweet Corn Pudding


A staple at my Thanksgiving table is corn pudding.  I have a romanticized vision of  amazing and varied side dishes,  and tried each year to find the perfect version until I stumbled upon this one from Epicurious.com.  I've shared this recipe before, back in 2008, but since I've stuck with this recipe 5 years later it's worth another mention.

It's sweet with a custard-y center with chewy, caramelized edges.  The perfect complement to the savory turkey and gravy.  A little spoonful right in the middle will make your Thanksgiving plate complete.
 

4 cups frozen corn kernels (about 19 ounces), thawed
4 large eggs
1 cup whipping cream
1/2 cup whole milk
6 tablespoons sugar
1/4 cup (1/2 stick) butter, room temperature
2 tablespoons all purpose flour
2 teaspoons baking powder *
1 teaspoon salt

Preheat oven to 350°F. Butter 8x8x2-inch glass baking dish. Blend all ingredients in processor until almost smooth. Pour batter into prepared dish. Bake pudding until brown and center is just set, about 45 minutes. Cool 10 minutes; serve. 

*I whip up this recipe minus the baking powder the night before and place in a covered container.  Before I pour it into the prepared baking dish, I whisk in the baking powder then pop it in the oven.

My bloggy friend, Tara, blogged about a book she just read and posed a question that seemed so fascinating to me.  The Future of Us, by Jay Asher summarized by Tara: "It is set in 1996.  When 2 friends download an AOL CD onto their computer, they gain access to their 2011 Facebook accounts.  They try and change their actions to manipulate their futures."

Simple Tailgating Menu

 Sometimes the recipes aren't a revelation when you are planning an event, but you might just need to feel inspired.

Here is a simple, quick menu I planned for a weeknight tailgate that had to go together ahead of time for a last minute duck out the door:


Turkey and Cranberry Sliders - (Buttery Hawaiian Rolls sliced open and layered with sliced Turkey, Brie, and a sliver of cranberry sauce. Place back in bag to transport.)

7 Layer Dip - (layer refried beans, sour cream, salsa, shredded cheese, chopped lettuce, sliced olives, and scallions in a rectangular container with a lid.)

Cherry Cheesecake Dip -  (Crush a sleeve of graham crackers and place in bottom of container, mix 1/2 brick softened cream cheese, 1/2 cup marshmallow fluff, & one container of Cool Whip & spread over crackers, top with a can of pie filling.)

Saltine Toffee

We supplemented with cold fried chicken from the supermarket, deviled eggs, chips, veggies, and graham crackers for dipping.

Everything was made ahead and popped into a cooler on the way out the door.  If you use disposable plastic containers there is no clean up!
